Castelforte Corvina is produced from 100% Corvina grapes (the same grape as used in the production of Amarone wine). The grapes are hand harvested in March following the harvest, the wine is then added to the grape skins left over from the production of Amarone. This traditional technique know as "ripasso" (means re pass) increases the alcohol and enriches the structure of the wine.
The Castelforte winery specialises in great quality wines using traditional Italian grape varieties and interesting techniques, such as air drying grapes for their Amarone, and also using the "ripasso" method for their other reds. These productions methods result in wines of great character and depth.
